The string doesn't make them go faster. It's there as a safety precaution. There is no radio system offered to the public (that I know of) that would have the range required for something that fast.
Controlling it with a radio is just a bad idea anyway. All RC and recreational radio systems have to be FCC compliant. They must accept glitches and iterference. There are a few radios less prone to glitching, synthesized frequencies ($$), Pulse Code Modulation ($$$), and the newest, which is running in the 900MHz range ($$$$). They are supposedly completely immune to intereference.
The string only keeps it on track, it's too fast to control without it. How it's able to go so damn fast is in the gearing. Basically, it's super tall. Which takes away acceleration, thats why they have to swing it to get it moving. Otherwise it would just sit there. The engines are just as important, they are tiny little two strokes but the rev to 40,000rpms, sometimes more. Thats also why they make that annoying wailing noise, 40,000RPMS is a lot!
