Woof, that's a tough question...some classics, and some neo-classics...
Lamborghini Miura P400SV
1962 Ferrari 250 GTO
1961 Jaguar E-type 3.8 Series 1
Mclaren F1
Ferrari Enzo
Ferrari F40
Bugatti EB110SS
Pagani Zonda C12S
Noble M12 GTO-3 or 3R
Jaguar XJ220-not so much for the drive, but for the sheer beauty of the thing.
there are hundreds of others I wouldn't mind having though hehehehe, and I really need an 11-car garage so I can fit my Lotus Elise 190 in there too.

Only 10? What to choose… What to choose…
McLaren F1 LM
Ferrari F40
Ferrari Enzo Ferrari
Porsche Carrera GT
Lamborghini Diablo GT
Honda NSX-R
Nissan Nismo R34
Mitsubishi Evo VIII (RalliArt tuned)
Toyota Sprinter Trueno GT-Apex AE86 (TRD tuned) (A car depended heavily on driver input, allowed a wide range of settings, and driver characteristics. A car that trains the driver. IMO)
A Formula One race car, preferable the F2003-GA or one from the mid 1960's.
