WOW! It says Big Red hit 204.7 mph!!! I wouldn't have guessed it given its shape and how it sounded in the one vid.

Peraps a shot of nitrous?

Many of the N/A cars used 250 & 350 multi-stage shots to get passed the double ton in the mile.

The main ingredient is power.

I'd say Pagani's comment would be true for the bikers though . . . 80 mph with your noodle out in the wind is exciting enough. Granted, streetbike helmets don't have the visor to grab all sorts of wind like my dirtbike helmet.
