how can you know if there is a spark if you have only just met her? that is the purpose of going on dates... to get to know the girl in question better, find out if there is any chemistry; and to get in thier pants 
you can't honestly tell me that you know there is instant chemistry between you and some girl you've never known, can you? There can be instant attraction, definately... but that is more on the lust side...
for example, i prefer dark - black haired girls who are relatively tall (above 5'5") with blue, or green eyes, and nice proportions.
I've dated outside the preferences, obviously.. redheads, brunettes, and a couple blonds to boot. Still none compare to the perfect 30... and I've known her long enough to know there is, or was something there.

I believe in first impressions. If I chat up a hot chick and she's really boring, then I probably would be a bit put off and wouldn't ask her out.
