would a DR-Z400sm, WR250x, G 650 xmoto, or a 560smr be able to hang with a 600cc middle weight sport bike? i know straightline isn't really something to compare but would i just totally get left behind?

no they wouldnt keep up, except within town where the speed limit is 30

they would be considerably better over rough ground or dirt/gravel roads, just for the hell of staing the obvious
