google search "autogk" its pretty idiot proof... perhaps not the best, but definitely the least complicated. It works a little better if you have the xvid codec installed too

Try http://www.freewarezoom.com/archives/free-dvd-ripper. It's freeware and extremely easy to use. I use it all the time, quality won't be as good as the dvdrips with bittorrent but it's good enough for me

DVD fab will do AVI Mobil & PSP as well as its normal DVD rips.
Magic DVD ripper is ok pritty esay to use in default.
But you need to do a few trial runs messing with setting to get good results
From both.
Never tried Nero 8s ripping yet even though its installed.
I use DVD Fab to rip DVDs to DVD & to convert to AVI
No problems only once with one file but thats all.

TMPGEnc 4.0 Express is what I use to encode avi files. Will encode just about everything into everything else. The only limitation is there is no support for 5.1 DD surround, it encodes audio tracks in stereo. Not freeware but look around and you will find a working copy. It gives you maximum control over the your desired output.

I heard Handbrake works really well, most of my friends use that. It also rips into iPod friendly formats as well.
