I heard that New Mexico is one of the most beautiful states in terms of Scenary-wise.
Also in California, I-5 is nice and fast, but it is boring as hell. I almost hate driving it, I took Hwy 101 from San Francisco to Los Angeles last time with stops along the way, much nicer drive, but also about 50-60 miles longer.
If you want really scenic drive, that would be Highway 1, Pacific Coast Highway, which runs from LA to SF, but that will take about 12 to 14 hours to complete.
