I haven't read the books myself, but I have heard different stories about his escape. I just try to keep it simple with the movie story because many probably don't even know that Star Wars books even exist.

[geek mode] he kills the Sarlac with a concussion grenade while crawling out of it, however the digestive acids did a number on him, causing massive scarring and eventually a cancer that took one of his legs. He maintains his ties with the Bounty Hunter's Guild though doesn't really play by their rules. Though Han Solo is no longer worth anything to him, he harbors a grudge for knocking him into pit in the first place, and continues on to bring in millions of credits in from various big time bounties. about 20 years later Han once again attracts a price on his head, and Fett goes off to scour the galaxy for him in Slave 4. I don't remember what happens, but somehow, Solo saves his life and Fett lets him go i think. [/geek mode]
